Japanese: Spicy Tuna Tartare

(serves 6-8)
Ingredients:
- 1 lb cryo-frozen tuna, defrosted and finely diced
- ½ cup garlic ginger sauce
- 2 teaspoons lemon juice
- 1 tablespoon chili garlic sauce or Sriracha (approx)
- 1 english cucumber, sliced
- 2 tbsp panko crumbs (for garnish)
Procedure:
- Defrost tuna overnight in refrigerator, dice finely
- Combine tuna, garlic ginger sauce, lemon juice, chili garlic sauce in a bowl
- Mix well, cover and let rest in refrigerator for at least one hour
- Scoop tuna over cucumber slices
- Garnish with panko crumbs
